Where is the best place to buy the parts to build an AC electric motorcycle? and I do mean a motorcycle - a street cruiser type not a scooter.

I'd have to say probably Metric Mind in Oregon. They sell a variety of high-end AC electric vehicle systems.
Have you seen a book called Build Your Own Electric Motorcycle
by Carl Vogel? I think it's a must-read for your project, and I'm looking at it right now; ) Pages 184-187 talk about the types of AC motors that are good for electric vehicles.
